Zucchini Bread In A Jar

****** ZUCCHINI BREAD ******

4 wide-mouth canning jars -- (1 1/2 pint)
4 new lids - don't use old ones
4 rings okay to use old ones
3 egg whites -- whipped
2 c granulated sugar
1 c margarine -- at room temperature
2 c zucchini -- grated
1 tsp vanilla
3 C unbleached flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsps cinnamon
1/4 tsp nutmeg
1/4 tsp cloves

Preheat oven at 325.

Place a baking sheet onto middle rack and remove top rack from oven. Before starting batter, wash jars, lids, and rings in hot soapy water and let drain, dry, and cool to room temperature.
Generously prepare inside of jars with margarine.
To prepare batter, combine flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves.
In another mixing bowl, combine egg whites, sugar, margarine, and zucchini. Divide batter among 4 jars (should be slightly less than half full).
Carefully wipe rims clean, then place jars on baking sheet (or they'll tip over) in the center of oven. Bake 40 minutes.
Keep lids in hot water until they're used. When cakes are done, remove jars which are HOT from oven one at a time. If rims need cleaning, use moistened paper towel. Carefully put lids and rings in place, then screw tops on tightly shut.
Place jars on a wire rack; they will seal as they cool.

Friendship Brownies

Layer in a quart jar:
1 C & 2 Tbsp flour
3/4 tsp salt
2/3 C brown sugar
2/3 C sugar
1 tsp baking powder
1/3 C baking cocoa
1/2 C chocolate chips
1/2 C chopped walnuts

Directions: beat together: 3 eggs, 2/3 C oil and 1 tsp vanilla. Add brownie mix and stir together. Spread in 9X9 greased pan. Bake at 350 degrees for 34-38 minutes (or until toothpick tests clean).

Friendship Soup

****** Layered Soup Mix In A Jar ******

These would make great gifts for Christmas or hostess gifts, or anytime of the year gift.....

1/2-cup dry split peas,
1/3-cup beef bouillon granules,
1/4-cup pearl barley,
1/2 cup dry lentils,
1/4 cup dried minced onion,
2 teaspoons Italian seasoning,
1/2-cup uncooked long grain rice,
1/2-cup alphabet macaroni or other small macaroni (can be put in a plastic sandwich bag to make it easier for the recipient to get out of jar)

ADDITIONAL INGREDIENTS
1 pound ground beef,
3 quarts water,
1 can ( 28 ounces ) diced tomatoes, undrained

In a 1-1/2-pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield: 1 batch.

***Friendship Soup Mix***
To prepare soup: Carefully remove macaroni from top of jar and set aside. In a large saucepan or Dutch oven, brown beef; drain. Add the water, tomatoes and soup mix; bring to a boil Reduce heat; cover and simmer for 45 minutes. Add reserved macaroni; cover and simmer for 15 to 20 minutes or until macaroni, peas, lentils and barley are tender. Yield: 16 servings (4 quarts)
